Summer Mess Scones
As part of our Summer 2024 recipe series, we have a recipe that is sure to satisfy your sweet tooth. This quick and easy take on a summer mess is the perfect bitesize treat! Fab for any garden party.

Recipe serves: 4
Ingredients for scones
325g self raising flour
100g soft cubed butter
80g caster sugar
140ml milk
1 egg for glazing
pinch of salt
Ingredients for the filling
150g strawberry jam
4 meringue nests
200g clotted cream
12 strawberries
The method
1. Place flour, salt, butter and caster sugar into a bowl and rub together with your fingers to form a crumb.
2. Preheat oven to 180.
3. Add milk to the flour mix to form a soft dough. Add more milk or flour if required.
4. On a floured worktop knead the mixture gently then roll out into a 2cm thick circle.
5. Cut out four 8cm round scones and place onto a baking tray.
6. Brush with egg wash and bake in the oven for 20 minutes.
7. Cut strawberries into 1/4's add in clotted cream, break up meringue and carefully fold all 3 together.
8. Once cooled, cut scones in half. Spread jam onto scones and top with the mess mix.
