Summer Beer Battered Cod Chunk Salad
As part of our Summer 2024 recipe series, we have a recipe that brings plenty of flavour and a twist to the average salad. Fish is the perfect healthy alternative to other meat, full of vitamins and can be whipped up in no time. Perfect for sharing with friends and family.

Ingredients for beer battered cod
600g skinned cod fillet
250ml london pride beer
180g self raising flour
salt & pepper to season
Ingredients for the salad
2 gem lettuce
12 cherry tomatoes
8 radish
80g gherkins
20g capers (optional)
1 lemon
mayonnaise to dress salad
The method
1. Cut cod into 2cm cubes.
2. Add beer to self raising flour and whisk to a batter. Add seasoning.
3. To make salad, wash gem lettuce, half cherry tomatoes, slice radishes and gherkins and cut lemons into wedges.
4. Dust cod pieces in flour then dip in the batter.
5. Deep fry for 4-5 minutes until golden brown and cooked.
6. To assemble, place all salad into bowls, drizzle with mayonnaise and top with cod chunks.
Garnish with lemon and capers if desired.
