Chorizo Sausage Casserole with Saffron Roasted New Potatoes
Smoky chorizo, sweet peppers and a rich tomato sauce come together in this hearty Spanish-inspired casserole. Served with fragrant saffron-roasted new potatoes, it is a comforting yet vibrant dish. Perfect for any occasion.

Ingredients
600g Spanish Grilling Chorizo Sausage
100g Chopped Red Pepper
100g Chopped Green Pepper
100g Diced Onion
2g Chopped Red Chilli
240g Pizza Sauce
400g Tinned Chopped Tomato
600g New Potatoes
0.5g Saffron Strands
60ml Olive Oil
5g Sea Salt
A pinch of Smoked Paprika
Chopped Parsley
The method
1. Drizzle the new potatoes with 50ml olive oil, sea salt and saffron.
2. Roast the potatoes in the oven at 170 degrees for approximately 40 minutes.
3. In a hot pan, heat the remaining olive oil and sear the sausages. Then add the peppers, onions, chilli and smoked paprika.
4. Add the pizza sauce and chopped tomatoes, then cook in the oven for approximately 45 minutes.
5. To assemble the dish, place the casserole and new potatoes into serving dishes and sprinkle with chopped parsley.
