Asian Style Mussels

This Asian style mussels recipe is a quick and tasty way to enjoy seafood! For a complete meal, try pairing it with some rice noodles or an asian side salad.

Ingredients for mussels

400ml coconut cream

2kg fresh cleaned mussles

1/2 diced onion

3 crushed garlic cloves

20g fresh ginger

1/2 chopped red chilli

100ml vegetable stock

5g cumin

10g curry powder

10ml oil

Ingredients for garnish

1 shredded spring onion

20g chopped coriander

1 sliced red chilli

1 lime wedge

The method

1. In a wok or saucepan, fry the diced onion, garlic, ginger, chilli, cumin and curry powder for 2-3 minutes.

2. Add in the vegetable stock and mussles. Cover with the lid and let it sit for 1 minute.

3. Pour in the coconut cream and stir the mussles. Sit for 2-3 minutes untill all the mussels have opened.

4. Serve the mussels and sauce in bowls and garnish with spring onion, chilli, lime and coriander
