Albanian Chicken Kebabs
As part of our Euros 2024 recipe series, we've got a yummy treat just for you! These Albanian Chicken Kebabs are super tasty and perfect for watching the big game, why not serve with a fresh salad and warm pita bread for a tasty treat you enjoy right in front of the TV!
This is a delicious dish that’s sure to satisfy everyone, whether they love football or just love good food!
Recipe serves: 4 people
Prep time: 6 Hours (Marinate Chicken)
Cook time: 15 minutes
Ingredients
1k Chicken Thigh Meat (Fillet)
200g Salami
50ml Olive Oil
1 tsp Chili Powder
1 tsp Oregano
4 cloves of garlic (minced)
salt & pepper to season
60g Honey
To serve
8x Bamboo Skewers or Metal
1x Iceberg Lettuce
3x Vine Tomatoes
1x Red Onion
Mint Leaves
Hot Chili Sauce
Tzarziki
4x Flat round Pitta Breads
The method
1. Cut chicken thigh fillets into 1/4 inch strips.
2. Cut salami into 1/4 squares.
3. In a bowl, add the chicken and salami with olive oil, chili powder, oregano, garlic, honey, salt & pepper.
4. Place in fridge to marinade for a minimum of 6hrs.
5. To make the salad, shred lettuce, slice red onion, and quarter tomatoes. Add mint leaves and mix together. (Place to one side)
6. Skewer the chicken and salami.
7. Cook on char-grill or in frying pan for a few minutes each side then finish in the oven until fully cooked.
8. Heat up pittas and serve with salad, hot sauce and Tzatziki.
